Red kimchi 🌶️

The classic, spicy version of Korean kimchi. Fermented cabbage, radish, garlic, ginger, scallions, and gochugaru chili pepper—slowly fermented to develop flavor, crunch, and a beautiful aromatic complexity. It's spicy, but just the right amount.

Serve alongside hot rice, in a burger, a sandwich, or even as an appetizer. The older it gets, the more pronounced its flavor becomes.
